Storage of olive in this temperature conditions decrease resistance to oxidation and fruit hardness and increase acidity, carbonyl compounds, bitter and hot taste in oil. The aim of this study was to evaluate the effect of different storage conditions of olive (yellow variety) harvested from different regions of the Ardabil province (Parsabad and Aslandouz) on the changes of phenolic compounds content, thiobarbituric acid index, fatty acids profile and color of olive oil in the different conditions of olive storage. Materials and methods: In this study, olives were packed in polyethylene bags and stored at temperatures of 20°C, 5°C and -18°C for 60 days. Then, olive oil was extracted with cold method during the storage time and finally olive oil was evaluated in terms of various properties by standard methods. Phenolic compounds and thiobarbituric acid index were detected by spectrophotometer and fatty acids profile and oil color were determined by gas chromatography and digital photography Hunter lab simulator, respectively. This study statistically was carried in factorial design with 6 treatments of olives harvested from two different regions and also comparison of means was performed by Duncan's test at different times. Results: The results showed that the harvest region and different storage conditions of olive had a significant effect (P<0.05) on various characteristics. The results of mean comparison in different samples of olive oil showed that increasing of temperature and storage time were lead to increase of extracted oil content, thiobarbituric acid index and L and a indexes of olive oil, but the phenolic compounds content and b index of olive oil was reduced. Based on the results of gas chromatography seven major fatty acids were observed in olive oil that the highest content was related to oleic acid (%57.38 to %58.24), followed by linoleic acid (%17.99 to %18.87), palmitic acid (%16.87 to %17.94), stearic acid (%2.51 to %2.81) and palmitoleic acid (%2.38 to %2.45). Conclusion: In general, the olives related to Parsabad region which were stored at temperature -18°C, had lower oil content, thiobarbituric acid index and L and a indexes of olive oil and had higher phenolic compounds and b index than the other olives (P<0.05). Therefore, in the present study the mentioned treatment in which it also had a better shelf life was the best treatment. Keywords: Olive oil, Phenolic compounds, Fatty acids profile, Storage conditions, oil color}, keywords = {Keywords: Olive oil,phenolic compounds,Fatty acids profile,Storage conditions,oil color}, title_fa = {بررسی شرایط مختلف نگهداری میوه زیتون روی برخی از ترکیبات روغن استخراج شده از زیتون دو منطقه مختلف اردبیل}, abstract_fa = {سابقه و هدف: نتایج تحقیقات نشان داده است که نگهداری در شرایط دمایی C° 6-5 زیتون را به مدت دو ماه بطور مطلوب نگهداری می کند. با نگهداری میوه در این شرایط دمایی، مقاومت به اکسیداسیون و سختی میوه کاهش و مقدار اسیدیته، ترکیبات با عوامل کربونیل و طعم‌های تلخ و تند در روغن افزایش می‌یابد. هدف از این پژوهش بررسی تاثیر شرایط مختلف نگهداری میوه زیتون رقم زرد روغنی برداشت شده از مناطق مختلف استان اردبیل (پارس آباد و اصلان‌دوز) روی تغییرات میزان استخراج روغن، ترکیبات فنولیک، اندیس تیوباربیتوریک اسید، ترکیب اسیدهای چرب و رنگ روغن زیتون در شرایط مختلف نگهداری آن بود. مواد و روش‌ها: در این تحقیق، زیتون‌ها در بسته‌های پلی اتیلن بسته بندی و در دماهای20، 5 و 18- درجه سانتی‌گراد به مدت 60 روز نگهداری شدند. سپس در طی مدت زمان نگهداری، روغن نمونه‌های زیتون با روش سرد استخراج شد و در نهایت نمونه‌های روغن‌ زیتون حاصل از لحاظ ویژگی‌های مختلف توسط روش‌های استاندارد مورد ارزیابی قرارگرفتند. برای ارزیابی ترکیبات فنولیک و شاخص تیوباربیتوریک اسید از دستگاه اسپکتروفتومتر، برای ارزیابی ترکیب اسیدهای -چرب از دستگاه کروماتوگرافی گازی و برای بررسی رنگ روغن زیتون از عکسبرداری دیجیتالی شبیه‌ساز هانترلب استفاده شد. این پژوهش در قالب طرح فاکتوریل با 6 تیمار برای دو منطقه جمع آوری شده زیتون انجام شد. مقایسه میانگین‌ها در زمان‌های مختلف با روش آزمون دانکن انجام شد. یافته‌ها: نتایج نشان داد که منطقه برداشت و شرایط نگهداری مختلف میوه زیتون تاثیر معنی‌داری (05/0>P) روی ویژگی‌های مختلف داشت. نتایج مقایسه میانگین نمونه‌های مختلف روغن زیتون نشان داد که افزایش دما و مدت زمان نگهداری باعث افزایش میزان روغن استخراجی، شاخص تیوباربیتوریک اسید و شاخص L و a شد، ولی میزان ترکیبات فنولیک و شاخص b کاهش پیدا کرد. براساس نتایج حاصل از کروماتوگرافی گازی، هفت اسید چرب عمده در روغن زیتون مشاهده شدکه بیشترین آن مربوط به اسید چرب اولئیک (38/57 تا24/58 درصد) بود و بعد از آن اسیدهای چرب لینولئیک اسید (99/17 تا 87/18 درصد)، پالمتیک اسید (87/16 تا 94/17 درصد)، استئاریک اسید (51/2 تا 81/2 درصد) و پالمیتولئیک اسید (38/2 تا 45/2 درصد) قرار داشتند. استنتاج: در کل تیمار مربوط به روغن استخراجی از زیتون های منطقه پارس آباد در مقایسه با منطقه اصلاندوز که در دمای 18- درجه سانتی‌گراد نگهداری شده بودند، دارای میزان روغن، شاخص تیوباربیتوریک، شاخص L و a کمتر و ترکیبات فنولیک و شاخص b بیشتری نسبت به سایر تیمارهای مورد بررسی بود (05/0>P). بنابراین، در تحقیق حاضر این تیمار که دارای زمان ماندگاری بالاتری نیز بود، به عنوان بهترین تیمار معرفی شد.}, keywords_fa = {وا‍ژه های کلیدی: روغن زیتون,ترکیبات فنولیک,پروفیل اسیدهای چرب,شرایط نگهداری,رنگ روغن}, url = {https://fppj.gau.ac.ir/article_3994.html}, eprint = {https://fppj.gau.ac.ir/article_3994_d9f50344d9b3a3a7f97958ea27bc58db.pdf} }
